April 19, 2017 Today marks the 100th batch since brewing operations began here at Critz Farms in late 2015. I knew I wanted to make something special for this milestone, and luckily I was able to squeeze a new recipe in between canning cycles for Batch #100. The Estate Pale Ale is made with barley and hops grown right here at Critz Farms. Critz Pale Malt comprises the malt bill; we have our barley malted by Flower City in Rochester and Valley Malt in MA. For the hops, the Estate uses … [Read more...] about Batch #100: Estate Pale Ale
March 21, 2017 Greetings from the brewhouse! It has been a while since I've checked in, so I wanted to give a run down of where the brewery here at Critz Farms is headed this year - we've got some exciting things in the works! The brewhouse has been in operation since New Year's Day, so it felt great to finally re-open our tasting room doors last weekend and share what we've been working so hard on. First and foremost, we are moving full steam ahead into canning! Our initial runs of The … [Read more...] about Looking Forward in 2017
A quick update from the brewhouse: yesterday we put beer in bottles for the first time, a very limited run of our brand new winter seasonal: Winter Warmer Spiced Ale. The Winter Warmer also serves to launch our Small Batch Series, which will feature unique and one-off beers to be released periodically. … [Read more...] about Winter Warmer is here! In 22s!
October 27, 2016 A few short months ago, we here at Critz Farms decided to put beer in cans. With the beer hitting stride and new distribution channels opening up, it was the right move to make. But it also meant we had to move fast, tackling new labels (shout out to the extremely talented designer Kerry MacHugh), complex logistics, production schedules, and more. Not least, I knew from the start I wanted to put a special IPA out on the market: enter The Eleven, a brand new … [Read more...] about Crafting The Eleven
It took just over 2 weeks for us to (almost) sell out of our first canning run! A few cases are left for sale in our tasting room, and Rochester folks might be able to find some at AJ's Beer Warehouse - but otherwise they are gone! We learned quite a bit on the first run, and no doubt we have more to learn. We're already started on the next run and expect to release fresh cans of The Eleven and Pig City in early November. Thank you everyone for your support! … [Read more...] about First Canning Run Nearly Sold Out

August 18, 2016 So, we’re making beer here at Critz Farms – but what kinds? What’s on tap at Critz? One of the exciting things about craft beer for both brewers and beer drinkers alike is variety. The craft beer revolution over the past several decades has given rise to unprecedented variety – not to mention quantity and quality – of delicious craft beer. Here at Critz we have a 2.5 bbl brewing system, which means we are quite tiny and fall under most definitions of a nano brewery. This … [Read more...] about What’s On Tap At Critz?
August 1, 2016 Here we are! Brewing beer at Critz Farms! While we have been underway since only last fall, the opening of Critz Farms Brewing and Cider Company has been a long time coming: we were ironing out countless details, working on recipes, gathering equipment, and fine-tuning operational protocols for nearly a year prior to opening. To say we are excited to be underway in earnest is an understatement! As the head brewer at Critz, I face a number of challenges. Any business that … [Read more...] about Brewing Beer At Critz Farms
