Greetings from the brewhouse! It has been a while since I’ve checked in, so I wanted to give a run down of where the brewery here at Critz Farms is headed this year – we’ve got some exciting things in the works! The brewhouse has been in operation since New Year’s Day, so it felt great to finally re-open our tasting room doors last weekend and share what we’ve been working so hard on.
First and foremost, we are moving full steam ahead into canning! Our initial runs of The Eleven IPA and Pig City Porter have been a success, so on we go – not only do we have great looking new shrink sleeve labels on our cans, but we will be upping the frequency with which we can in 2017. Look for cans of The Eleven and Pig City now, and Honey Blonde Ale starting in May. Check out the new label from our extremely talented designer Kerry MacHugh!
Second, new beers! Our Spring Seasonal Maple Porter hit the taps for opening weekend last week, and this year’s batch is tasting delicious. I also look forward to continuing our Small Batch Series this year: first up is a New England style IPA – keep an eye out in about 3 weeks! I can’t wait to see the results of a few new hopping techniques on this beer, such as dry hopping during primary fermentation.
Speaking of experimenting with new techniques, we are about to kick off our barrel aged series. This weekend (Saturday March 25), we will release the first of our barrel aged beers, a bourbon maple barrel-aged Imperial Porter. These barrels first produced bourbon at the Adirondack Distilling Company, and then our bourbon maple syrup, and now an Imperial Porter. Next these barrels will move into sour beer production. Our barrel aging program is very small, so releases will be extremely limited, and available on farm only.
Finally, most exciting of all for yours truly, we are about to up our fermentation game with some shiny new conical fermenters and a glycol system. Any brewer understands the challenges of fermenting with ambient temperature control, and I could not be more excited about our brewhouse upgrade!
